For this dish we have selected the king of pork cuts, the Duroc double cut, single bone chop from the loin of this majestic animal. The rib bone has been Frenched  for a breathtaking center of the plate presentation. Duroc pork has a higher level of intramuscular fat which results in a marbling effect that gives these chops a superior tender chew and natural juiciness. To further enhance these prized qualities, we will be brining the chops in an aromatic bath which will make it virtually impossible to not present an award worthy dish. The rich, nutty flavor of black trumpet mushrooms paired with the tart sweetness of apples, pork's closest culinary friend, add the final accent of rustic elegance to this dish which is far better experienced than described.
